Remove all the .*bonsai.* variants from https://github.com/10gen/mongo/blob/14961a2d4b1d6933d5abf661d4fd57adca14fa13/etc/evergreen_yml_components/variants/perf/perf.yml

The "older" versions are still commented out in system_perf.yml- may want to consider also removing those comments as part of this work, just in case.
