Update enterprise-rhel-80-64-bit-large-txns-format to run on 7.0, 8.0, and future branches

      enterprise-rhel-80-64-bit-large-txns-format variant provides valuable test coverage and we should update our yaml to make sure that it is included after branching.

      We should add it to stable branches that have been previously cut and are missing it. I think that is 7.0 and 8.0, but please confirm.
