Integration test for $graphLookup spilling.js consumes gigabytes of RAM, especially on a sharded suites.

This is fine in isolation, but can sometimes cause nodes to be OOM killed.

Instead of testing spilling by creating large documents, let's use query knobs to lower the memory limits.

It will allow us to test spilling without overloading the testing infra.
