format.sh unused verbose function and outdated usage function

      The format.sh script contains a verbose function that became unused since WT-8614.

      Furthermore, the usage function is missing the following options:

      • -d directory directory of format binary"
      • -T turn on format tracing (defaults to off)" (Added by WT-8372)
