WT-11233 did this for all Mongo versions beyond 5.0. This ticket was created to implement the same for Mongo version 5.0 which still uses the v3 toolchain and hence could not directly be backported from WT-11233. The aim of this ticket as quoted from WT-11233: we should add the configure_env_vars expansion to all of our buildvariants, ensuring we configure WiredTiger to be compiled with the mongotoolchain in all cases.
