Update evergreen buildvariants to use ARM hosts

      The Atlas fleet has migrated to Graviton (ARM) hosts, however our primary buildvariants ! Ubuntu 20.04
      ! Ubuntu 20.04 ASAN
      ! Ubuntu 20.04 Compilers
      ! Ubuntu 20.04 MSAN
      ! Ubuntu 20.04 Minimal
      ! Ubuntu 20.04 UBSAN

      are defaulting to ubuntu2004-test which is x86. We should migrate these variants across to ARM hosts.
