Count tombstoned cells in the size_stats walk

      The debug=(size_stats) walk counts every on-page key and value cell, so tombstones that still occupy a leaf image are reported as live data. Split cells whose value time window has a stop visible to the walk (__wt_txn_tw_stop_visible) into deleted count and bytes. Fast-truncated refs and history-store versions are out of scope.
