Extend WiredTiger stat declarations to help timeseries tool

It would be helpful to add more information to the WiredTiger stat_data.py file that can be used by the timeseries tool to understand more about what different WiredTiger statistics represent.

Specifically a way to reliably identify whether a statistic represents a size in bytes at first.
