Add some rollback_to_stable statistics

      Currently there are no statistics gathered as part of the WT_CONNECTION::rollback_to_stable API. We should add some statistics to this call. Some ideas for interesting statistics are:

      • Number of rollback_to_stable calls.
      • Stable timestamp rolled to on the last call.
      • Number of updates set to aborted via rollback.
