Ensure older versions of WiredTiger write big-endian as expected

      We had a bug in WiredTiger where it wasn't bit-swapping some content written to disk on big-endian platforms as expected. This was fixed in WT-4452. This ticket captures the work to ensure that older versions of WiredTiger and MongoDB can read both versions of data files, but never write the newer format.
