Rename poc_test to stress_test and update the evergreen.yml accordingly.

Additionally add insert_operation logic, the difficulty will be figuring out which key_id to use next for each collection.

Update config_poc_test_stress.txt accordingly using FTDC data to validate that the workload is stressful.
