Use oldest_timestamp and stable_timestamp instead of oldest/stable

      The WT_CONNECTION.query_timestamp stable and oldest configurations return the system's stable_timestamp and oldest_timestamp respectively. It would be simpler if the names used by WT_CONNECTION.query_timestamp matched the names used by the system.

      This is technical debt and has no effect on testing or other work.
