Disable many-collection-test on 4.4 and 5.0

      The many-collection-test is not compiling on 4.4 and 5.0 WiredTiger's evergreen builds. The reason is it is trying to apply the wrong MongoDB version to the WiredTiger version to build the latest binary. The test then eventually fails. It is best to disable the test till we fix the job. WT-8796 has been filed to fix the job - it should also re-enable the test for 4.4 and 5.0 which this ticket will disable.
