Summary

WiredTiger Mac tests running on Evergreen currently run on MacOS 10.14 (Mojave). However, MacOS 10.14 is no longer supported by Apple (https://en.wikipedia.org/wiki/MacOS_Mojave) so we should migrate to newer Evergreen hosts. Specifically we should migrate to MacOS 11.0 (Big Sur) which is the latest available on Evergreen at the moment.

Acceptance Criteria (Definition of Done)
Change the macos-1014 instance type to macos-1100 and ensure that the tests continue to work, either fixing issues that arise, or creating new tickets to address them.
