The statistic config was removed from test/format as we want it turned on by default and to run every time therefore the config was made redundant. This config was removed as a result of WT-9734, however it was not removed from config_def.c and connection.h and also wts.c.

This ticket will ensure the config is removed from all necessary places so that test/format can be built without error after running config.sh.
