macOS 11 is EOL, but libmongocrypt still builds on macOS 11. Bump to macOS 14.
Urgency
Evergreen has scheduled the macos-1100 and macos-1100-arm64 distros for removal on October 30, 2026 (deprecation warnings appear on recent builds). Both macOS build variants stop scheduling after that date.

- Guidelines around Evergreen distros (DevProd Build Team): "macos-11 is deprecated and we will soon work to phase it out. Prefer macos-26 or macos-14 over other (older) macos distros." The supported macOS fleet is macos-14 (Sonoma, Intel) and macos-14-arm64 (Sonoma, ARM), plus -gui variants.
- macOS 11 Big Sur is past Apple's support window (EOL 11/2023 per the same page's EOL table).
Proposed
- Move macos_x86_64 to macos-14 (Intel Sonoma fleet); update its display name.
- Move macos to macos-14-arm64 (the same distro test-python already uses successfully). Care point: this variant sets release_os_arch: macos-universal and CMAKE_OSX_ARCHITECTURES="arm64;x86_64" — it produces the universal macOS release artifacts — so the migration must confirm the macos-14-arm64 image still supports the universal (Intel cross-compile) build and the /opt/homebrew/bin/cmake expansion.
- Validate with a patch build covering both variants before the Oct 30 removal.
Acceptance criteria
- No macos-1100* references remain in .evergreen/config.yml.
- Both macOS variants green on mainline.
- Universal macOS release artifact still produced by upload-release.
