Support viewOn and pipeline options in createCollection helper

      PHPLIB never introduced support for create command options for read-only views. This relates back to DRIVERS-309, which for some reason had previously been validated for PHPC (perhaps because it had no create helper to begin with).

      While introducing support for the viewOn and pipeline options, we should also check whether any other options might be missing.
