Symlink to non-existent file included in rubygem

      The `mongo` rubygem contains a symlink to a file that is not included in the rubygem itself. This is causing failures in our build systems that include this gem. 

      Specifically, spec/support/ocsp (which is included in the rubygem) symlinks to the [.mod/drivers-evergreen-tools] submodule (which is not included in the rubygem).
