This ticket is intended to cover the similar generifying process as described in SERVER-114078. Note that the ticket will likely need to be completed after SERVER-117081 so that SorterFileStats can be avoided in the "shim" made for testing the concept (as currently, the ctor for a bounded sorter is hardcoded to use one).
In the process of performing the above, a bug in the underlying container instantiation of bounded sorter was found. Fixing that can be included in this ticket as now it's functional changes + covering tests.
