Inserts, updates, and deletes may be wrapped inside an applyOps oplog entry in various cases, like grouped WUOW, mutli-doc transactions, etc.

Create a helper function to parse the deltas from all the oplog entries inside the o.applyOps field, and return the accumulated size and count deltas for all collections.
