Update the test suites used in the "SBE engine" build variant

      Throughout the SBE development process, the team has been adding individual test suites to the SBE build variant YAML on an individual, per-suite basis. In SERVER-52799, when SBE becomes enabled by default, we are also switching the SBE build variant to be "SBE off", so that we maintain some test coverage of the classic execution engine.

      This ticket is a follow-on to update the list of suites in the new "Classic Engine" build variant so that the list is closer in line with other test suites (e.g. matching the at least the test suites in Enterprise RHEL). As part of this work, we should also consider expanding this test coverage to other build flavors, like Enterprise Windows and the like.
