[6.0] Enable feature flag

      We should enable featureFlagQueryStats on v6.0 and do the following cleanup:

      • replace featureFlagQueryStats test tag with requires_fcv_60
      • remove featureFlagQueryStatsFindCommand from the branch (remove references to 
        SERVER-79494)
      • remove query stats variants 
      • add query stats passthrough suite to non-feature flag variants

      We have a separate ticket to clean up perf testing infrastructure so that does not need to be done here.
