Add macos dynamic link build coverage to evergreen

      Now that we have macos 14 support in evergreen, we can switch on coverage for macos dynamic link builds in evergreen. Previously we were not able to cover this configuration because of the 512 dynamic link library limit, but that does not exist in macos 14.
