Move test_live_restore to use the CppSuite database model instead of it's own one

      Right now test_live_restore uses it's own database definition to persist across database WiredTiger connection restart, as of WT-16177 the database model will be able to exist across this event and thus we should be able to make do with it.

      This will de-duplicate some code.
