In WT-5527, we made the change to track whether we need to restore the update chain at each chain, each splitted page, and each page level.

It is quite complex and we need to properly document the behaviour at each level how we track, free, and restore updates.

The scope of the ticket is expanded to document how eviction works in durable history.
