Removes the special-purpose aggregation query stats passthroughs.
The query stats feature has stabilized and matured enough that we don't expect many failures due to this, so we don't need to special case the coverage and can absorb it into the main test suites.
This ticket is a stepping stone, we also plan to enable this coverage on other passthrough suites such as jscore and sharded collections variants.
We have also triaged [SERVER-116390 Enable query stats by default](https://jira.mongodb.org/browse/SERVER-116390) to target 9.0, which is directionally aligned with this effort.
