Remove the special-purpose core query stats passthroughs.
The query stats feature has stabilized and matured enough that we don't expect many failures due to this, so we don't need to special case the coverage and can absorb it into the main test suites.
This ticket builds upon SERVER-119543 and targets the core suites. It is related to SERVER-118946 also - the sharded variants might be trickier to get working.
We have triaged [SERVER-116390 Enable query stats by default](https://jira.mongodb.org/browse/SERVER-116390) to target 9.0, which is directionally aligned with this effort.
