Remove shard-lite, standalone, and m60-like variants

Description:

This covers removing these variants that aren't used very often or don't match existing customer topologies. This will help relieve queueing in sys-perf for developers working on 8.0. If there are workloads on these variants that don't run on 3-shard or 3-node, reach out to the workload owner to understand next steps.
