We are currently running tests on macOS 11.0 infrastructure in Evergreen and should look into a switch to macOS 13.0 (for both x86 and ARM64) to align with the 8.0 Server Platform support plan. 

This ticket will (a) perform the switch for ARM64-based Macs and (b) disable the tests on the now-obsolete Intel Macs running 11.0.

WT-12595 will enable the tests on macOS 13.0 Intel-based Macs, if/when they become available.
