Switch Mac Intel Evergreen builder to macOS 13.0

      We are currently running tests on macOS 11.0 infrastructure in Evergreen and should look into a switch to macOS 13.0 (for both x86 and ARM64) to align with the 8.0 Server Platform support plan. 

      This ticket will perform the switch for Intel-based Macs. WT-12354 will perform the switch for ARM64-based Macs.
